I'm looking for any info on fennec foxes for sale in Scotland. I've done all my pet research and now I am just wondering if anyone could recommend where to purchase a little bundle of joy from?

How long have you been researching? Keep in mind, you can learn a lot about fennec foxes over a few weeks, but part of purchasing any animal is thinking long term. If you've only recently decided on getting a fennec fox, it's best if you wait a few months and keep learning. There's always more to learn, and over time you may decide you do not want that animal.
(That was all just a "making sure" statement, just in case you had only been doing your research for a short while.)
Anyways, hello, and welcome. :) If you have truly done all of your research on their care, legalities, etc., as well as have proper enclosure/caging, then you could contact Elina (Flashman Foxes) in the UK. She occasionally has fennec litters, but she is very picky about where they go. From what I've heard, her waiting list is very long. But she is the fennec breeder I would recommend.

Elina's haven't bred for the last few years either. Maybe too old
But she might know someone to direct you too.
