What kind of exotic birds? Basically all birds but poultry and pigeons count as "exotic".
Do you want parrots? Softbills? Birds of prey? Finches and other tiny birds?
softbillsforsale.com shows a lot of exotic birds on the market that are not parrots.
My main interest is in parrots, dogs, toothed whales and snakes.
Future animals I want to have when we have land are camels, wolfdogs/wolves, coyotes or jackals, striped hyena or aardwolf. Also poultry, rabbits water buffalo and/or yak for livestock.

If you are referring to outside birds, my preference is peahen and peacock. the peacocks has beautiful colors and when they fan out their feathers, they look even more stunning. .

I also had a couple pet turkeys.

if you are referring to indoor, I personally like the Cockatiel. having an indoor bird can make quite a bit of a mess.
I also had a parakeet. (both were kept together and got along fine)

I personally don't keep any of my animals, including my house birds in their cage, I don't have any house birds now.

other than that, I don't know what other birds to suggest. I can only suggest what I had experience with.

I forgot about them, I seen one awhile ago, and they were pretty neat. I think they learn to talk easier than some birds.

They are chirpers and not screamers like parrots but they can still be loud https://www.youtube.com/watch?v=W03sTA0sDgU

They are super cute though

You have to be careful to feed a low iron diet but otherwise small song bird so makes them not too hard to care for.

If you want quiet there are quail, large and small(button) though not really good pets because they have too much anxiety and can die of freight.

There are diamond doves wouldn't be too loud. Finches and canaries will chirp a lot but during the day and not super loud since small.

Budgies are not as loud and vocal as "real" parrots. Had some as kids and they were actually quit quiet.

Toucans are really cool. They can be fragile though; I know of two that died from stress. But they are otherwise really neat birds as long as you give them the proper care they need. They purr when you pet them. It's pretty neat.

Always make sure to do as much research as possible before bringing anything into your home. Very important for you as well as for the animal.

If you want quiet birds, the best are probably pigeons. I don't know what most softbills sound like.
But pretty much any other bird than a parrot is going to be an aviary (outside, definitely not apartment) bird. They hop from perch to perch, rather than climb, so anything much larger than a finch is going to need a huge cage (= aviary).
My main interest is in parrots, dogs, toothed whales and snakes.

Do they really smell sweet? I've read that the different kinds have very distinct scents.

Couldn't tell you about the smell. If they had a particular odor I don't remember or never noticed.
